I've had some practice with whetstones (but am very much a beginner) on previous knives using a King 1000 stone but am looking to get a set of stones for these new knives to learn and grow and wanted to see what the collective mind thought. Initial thoughts after reading through previous posts were to get a Shapton Pro 1k and Shapton Pro 5k (or a Shapton Pro 1k and Suehiro Rika 5k) which either way would come out to ~$108 with tax. My guess is that you get what you pay for. However it is pretty expensive. After watching this forum for a while I recently got myself my first japanese petty knife (Anryu Hammered - Blue #2 w/stainless clad) with plans for a nakiri (Watanabe Pro 180mm - Blue #2 w/stainless clad) in the next month or so. The stone is meant to be used with water, not oil and for best results, simply soak stone for 5-10 minutes before use, and lubricate with additional water as needed when sharpening. The 1000 grit edge that those stones can give you is probably a bit coarser than the factory set edge on your knife, but it may not be. 1000 also gives you a working edge that isn't going to slice paper. Press J to jump to the feed. There is so much to say when it comes. I then saw that JKI had the Gesshin 1k/6k combo stone for ~$148 with tax and had seen a lot of great comments about Gesshin's on here but hadn't seen very many comments about the combo. I love the fact that these two are combined, as they eliminate the need for buying two separate sharpening stones. New comments cannot be posted and votes cannot be cast. Must've mixed up my words while writing. I was wondering if people had any experience with it and whether people thought the extra price would be worth it for a beginner. I've had a lot of luck with the Lansky Sharpening system.I also recommend the little spindly mount if you don't have a vice. Alternatively you could get a 3000 Grit Naniwa (I'd recommend the Chosera however it is also expensive) which gives a great finish aswell and is suited for knives that just need a bit of resharpening. 1000 also gives you a working edge that isn't going to slice paper but will still work. While single sharpening stones are best suited to specific knives, this kit gives users everything they need to maintain an edge on different types of knives and tools. https://www.amazon.co.uk/cutlery-grindstone-standard-DX-1000-finishing/dp/B0016VC46A/ref=sr_1_21?ie=UTF8&qid=1502064876&sr=8-21&keywords=king+whetstone, New comments cannot be posted and votes cannot be cast. I'd like to get a budget combo whetstone to maintain my new/primary knife. Then later on get something in the 800-2k range. In US these things are pretty cheap but it doesn't look like that is also true for the UK so maybe the Shaptons aren't the best idea. I also have a few generic really cheap knives in my drawer. A double sided Norton oil stone is ideal to get going. Also if you don't regularly flatten them, and one side has a dish there's a chance (however small) putting pressure in the middle of the stone could break it. in the case of this combo stone, both sides can be soaked. A place for all things chef knives. The Spyderco Bench Stone Sharpener is a ceramic stone with medium grit, making it useful for restoring dull or old knives to their former sharpness. I cut and chop a lot of vegetables like tomatoes, potatoes, parsley and other herbs. As for brands, any of the ones you posted are fine, I personally use chosera 3k, but gesshin and shapton pro/glass are all great options as well. The best sharpening stones kit is effective, low maintenance & cheap. Press question mark to learn the rest of the keyboard shortcuts. Should I get something like 400/1000 or more like 1000/3000? Add in a Shapton Glass 3k or 4k and the Glass 500 (preferably the double thick, it's a great, slow dishing coarse stone, while not being to coarse). The reason some cheaper stainless steels don't improve after about 3000 grit is because there are impurities and crystals which are larger than the abrasive. .FIYolDqalszTnjjNfThfT{max-width:256px;white-space:normal;text-align:center} Of course, the feedback you get won't be the same, but it'll definitely cut steel fast and allow to start working on your technique. I'm based in Slovenia (EU), so will probably be ordering from Amazon.co.uk or from this website (in Slovenian, linked directly to combo stones section). The first part that I can't decide on is what grit stones to get. In US these things are pretty cheap but it doesn't look like that is also true for the UK so maybe the Shaptons aren't the best idea. It's fine for a beginner, and it's good when you travel around a lot with your stones, not to have to carry all the seperate ones. Edge retention is more about the sharpening angle than the abrasive particle size. I’m thinking about getting my first stones, shapton pro 1000 and 5000. Theres no real reason to get rid of your 1k for now, i would recommend getting just a 3k or 5k. .c_dVyWK3BXRxSN3ULLJ_t{border-radius:4px 4px 0 0;height:34px;left:0;position:absolute;right:0;top:0}._1OQL3FCA9BfgI57ghHHgV3{-ms-flex-align:center;align-items:center;display:-ms-flexbox;display:flex;-ms-flex-pack:start;justify-content:flex-start;margin-top:32px}._1OQL3FCA9BfgI57ghHHgV3 ._33jgwegeMTJ-FJaaHMeOjV{border-radius:9001px;height:32px;width:32px}._1OQL3FCA9BfgI57ghHHgV3 ._1wQQNkVR4qNpQCzA19X4B6{height:16px;margin-left:8px;width:200px}._39IvqNe6cqNVXcMFxFWFxx{display:-ms-flexbox;display:flex;margin:12px 0}._39IvqNe6cqNVXcMFxFWFxx ._29TSdL_ZMpyzfQ_bfdcBSc{-ms-flex:1;flex:1}._39IvqNe6cqNVXcMFxFWFxx .JEV9fXVlt_7DgH-zLepBH{height:18px;width:50px}._39IvqNe6cqNVXcMFxFWFxx ._3YCOmnWpGeRBW_Psd5WMPR{height:12px;margin-top:4px;width:60px}._2iO5zt81CSiYhWRF9WylyN{height:18px;margin-bottom:4px}._2iO5zt81CSiYhWRF9WylyN._2E9u5XvlGwlpnzki78vasG{width:230px}._2iO5zt81CSiYhWRF9WylyN.fDElwzn43eJToKzSCkejE{width:100%}._2iO5zt81CSiYhWRF9WylyN._2kNB7LAYYqYdyS85f8pqfi{width:250px}._2iO5zt81CSiYhWRF9WylyN._1XmngqAPKZO_1lDBwcQrR7{width:120px}._3XbVvl-zJDbcDeEdSgxV4_{border-radius:4px;height:32px;margin-top:16px;width:100%}._2hgXdc8jVQaXYAXvnqEyED{animation:_3XkHjK4wMgxtjzC1TvoXrb 1.5s ease infinite;background:linear-gradient(90deg,var(--newCommunityTheme-field),var(--newCommunityTheme-inactive),var(--newCommunityTheme-field));background-size:200%}._1KWSZXqSM_BLhBzkPyJFGR{background-color:var(--newCommunityTheme-widgetColors-sidebarWidgetBackgroundColor);border-radius:4px;padding:12px;position:relative;width:auto} , but it looks just fine your budget, the tips can get rubbed raw at,!
